Description Teff (Eragrostis Tef) is an ancient grain grown in South Africa. It has a mild nutty flavour, with a molasses-like sweetness. Teff grains are so small that the bulk of the grain consists of bran and germ. This teeny-tiny grain packs a big nutritional punch! It’s most commonly used to make injera which you might be familiar with if you’ve had Ethiopian cuisine. It’s not just limited to that. In fact, this grain is quite versatile. Teff grain is gluten-free, naturally balancing for healthy hormones, high in fibre to keep digestion smooth, and provides 360% of the recommended daily value for manganese. Directions Boil 3 cups water. Add 1 cup teff grain, cover and simmer for 15 to 20 minutes or until water is absorbed. Stir occasionally near end of cooking, making sure not to let grain boil dry. Season and serve. Instant Pot: Place 1 cup Teff, 2 cups of water, 1 tablespoon oil/butter/ghee/coconut oil, and 1 teaspoon salt into the stainless steel insert of your Instant Pot. Set your Instant Pot to Manual on high pressure for 2-3 minutes. Follow up with a quick-release. Uses The tiny teff grain mixes well with a variety of other, larger grains. It can also be used in stuffing, appetizer toppings, or as a garnish for green salads. Uncooked teff grain can be added to most baked goods or substituted for seeds, nuts or small grains. Teff is easier to chew if the grain is toasted or soaked before steaming. Storage Product should be stored in a cool, dry place. Recommended shelf life is 12 months.
