What is coconut?
Coconut is the fruit of the coconut tree, a member of the palm trees family. It can measure up to 30 cm in diameter and people can use its water, milk, oil and meat! Naturally gluten and cholesterol free, it contains 20% protein and the eight amino acids essential to our body. Despite being naturally sweet, it shows a very low glycemic index (35). It is also extraordinarily rich in fiber!
